Lemon Chicken

  1. Ingredients:



    1 whole chicken
    1 large lemon, cut into halves
    Sprig of rosemary
    Salt and pepper to taste
    Butter or olive oil, whichever you prefer

    Heat oven to 350 degrees

    Rub butter or oil over the skin of the chicken until it is completely
    coated

    Take a knife and gently separate the skin from the breast meat;

    Slide lemon halves under the skin with the peel side up. This way the
    juice from the lemon will coat the breast. Season skin of chicken to
    your preference, place sprig of rosemary into the chicken.

    Cover and place in oven for 30-45 minutes. Remove cover and continue to
    roast until juices run clear, basting every 15-20 minutes depending on
    the size of the bird.

    If you've followed these steps correctly, your chicken should look like
    the one in the picture.

  3. My mother cooked lemon chicken one time when I was 10 years old and my sister was 8. There was no shadow of a doubt that this meal was like no other; there was something seriously wrong with this food. I think it had spent a good amount of time at the local butcher, and as such it tasted like it was cooked in lemon scented dishwashing liquid.

    Dad, being the role model that he was, managed to choke his down, all the while glancing over at mum, who was growing all the more agitated at our flat out refusal to eat. After about half an hour, at around 7pm, she told us we could eat it or go to bed.

    You've never seen two children more willing to go to bed.

    Mum never cooked lemon chicken again.

    Fk lemon chicken. Haunts my dreams.
